IGP Côtes Catalanes
The vines, which are trellised, are harvested early enough to keep a nice freshness.
The grapes are pressed directly, preserving the juices from any oxidation.
After cooling, the juices remain in static settling for 48 hours, the are cleared to be fermented at 14°C in stainless stell vats, with a small portion in barrels.
Once the vinification is completed, bottling is carried out quickly, always with the aim of optimizing the freshness of the product.
This wine presents both floral and mineral character with aniseed notes of wild fennel.
The balance is dominated by freshness, fruit and elegance.
